1. Bagel & Lox Board

Ingredients:
6 fresh New York bagels (plain, sesame, everything, or your favorite)
8 oz cream cheese (plain or flavored like scallion)
8 oz Acme smoked salmon (or lox of your choice)
1 red onion, thinly sliced
1 cup cherry tomatoes, halved
1/2 cup capers
1 lemon, sliced into wedges
1/2 cup fresh dill, chopped
4 hard-boiled eggs, sliced
Assorted pickles and olives
Instructions:
Slice bagels and arrange them on a large serving board.
Spread cream cheese into small bowls and place on the board.
Arrange smoked salmon in folds and place next to the bagels.
Add sliced onions, tomatoes, capers, and eggs in clusters.
Garnish with lemon wedges, fresh dill, and pickles.
Serve with your favorite coffee or mimosa!
2. Shakshuka with a Twist (Spinach & Feta)

Ingredients:
2 tbsp olive oil
1 onion, finely chopped
1 red bell pepper, chopped
3 cloves garlic, minced
1 tsp cumin
1 tsp paprika
1/2 tsp red pepper flakes
1 (28 oz) can crushed tomatoes
2 cups fresh spinach, chopped
4 oz crumbled feta cheese
4-6 large eggs
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Heat olive oil in a skillet over medium heat.
Add onion and bell pepper, cook until softened.
Stir in garlic, cumin, paprika, and red pepper flakes; cook for 1 minute.
Pour in crushed tomatoes and simmer for 15 minutes.
Stir in spinach and cook until wilted.
Make small wells in the sauce and crack in the eggs.
Cover and cook until eggs are set to your liking.
Sprinkle with feta and parsley before serving with warm pita or challah.
3. Bourekas with Assorted Fillings

Ingredients:
1 package frozen puff pastry, thawed
1 egg (for egg wash)
Sesame seeds (optional)
Fillings:
Cheese Filling: 1 cup ricotta, 1/2 cup feta, 1 egg, 1 tbsp parsley
Potato Filling: 1 cup mashed potatoes, 1/2 cup caramelized onions, salt & pepper
Spinach Filling: 1 cup cooked spinach, 1/2 cup feta, 1 clove garlic, minced
Instructions:
Preheat oven to 375°F (190°C).
Roll out puff pastry and cut into squares.
Place 1-2 tbsp filling in the center of each square.
Fold into triangles and press edges to seal.
Brush with egg wash and sprinkle with sesame seeds.
Bake for 20-25 minutes until golden brown.
Serve warm with tahini or yogurt sauce.
4. Rugelach and Coffee Pairings

Ingredients:
1 cup unsalted butter, softened
8 oz cream cheese, softened
2 cups all-purpose flour
1/4 cup granulated sugar
1/2 tsp salt
1 cup apricot preserves
1 cup finely chopped walnuts
1/2 cup mini chocolate chips
1 egg (for egg wash)
Cinnamon sugar (for sprinkling)
Instructions:
In a bowl, beat butter and cream cheese until creamy.
Add flour, sugar, and salt; mix until dough forms.
Divide dough into 2 balls, wrap, and refrigerate for 1 hour.
Roll dough into a circle and spread with apricot preserves.
Sprinkle walnuts and chocolate chips evenly.
Cut into triangles and roll from wide to narrow end.
Brush with egg wash and sprinkle with cinnamon sugar.
Bake at 350°F (175°C) for 20-25 minutes.
Pair with coffee blends like espresso, French roast, or vanilla latte.
